More leafy greens and local beer.

This is a picture of wine and a post about healthy eating. Or eating in general. Real talk: I’ve spent years agonizing over food. Trying to label myself: vegan, vegetarian, whole 30, paleo. I’ve self-imposed strict rules and guidelines only to be frustrated when I “failed”. I’m sick of it. Tonight I poured myself a big glass of Matt Bellassai’s wine and thought about the following things.

• I love cheeseburgers, craft beer, avocados, coffee, and chocolate cake.

• I run stronger and feel better when I’m eating cleaner.

• Life is too short for rules, how about guidelines?

• Let’s make 2017 the year of loving the body I have, celebrating what it can do, and taking more deep breaths.

• More leafy greens and local beer.

Brewing Success: Coffee Makes the Workplace Go Round

No-Bake Energy Bites

One night last week I decided to make some No-Bake Energy Bites. Yum. I’ve had them pinned to my Pinterest board for awhile and thought I’d just go for it. I went to the store and picked up what supplies I didn’t already have and adjusted it a bit for what I wanted.

If you’re super into following directions, go ahead. But if you’re missing something that’s on the list, be creative and forge on!

The recipe calls for:
1 C. Peanut Butter – I always have that in stock! My favorite is Skippy Natural. I didn’t measure it though, makes too much of a mess.
1 1/3 C. Toasted Coconut Flakes – I’m not a huge fan of coconut and I was too lazy to look for it at the store, so I skipped this. I added: 1 1/3 cup sunflower seeds (in place of coconut)
1 C. Ground Flaxseed – I found flaxseed meal and it worked great!
2 C. Dry, Old Fashioned Oatmeal – I had some quick oats and some steel cut oats. I did half of each.
1 C. Chocolate Chips – I got the mini ones
2/3 C. Honey –
I didn’t measure out the honey because that’s a pain. I just guessed.
2 t. Vanilla
I also threw in some Chia seeds that I had in my pantry.

Then you combine everything, let it chill in fridge for 30 minutes, and then roll it into balls of whatever size you want! I just mixed by hand which was difficult. I couldn’t get everything mixed together well but that left me with some granola at the bottom of the bowl which turned out to be really good on its own!

Here is some nutritional info that I found and Weight Watchers points:

Beware: messy and crumbly both to make and eat. Colin swept the kitchen afterwards because I had made such a mess. Whoops.

Craving cruncher: I almost went downstairs and bought a bag of Ruffles Cheddar chips (because I’ve decided these are my most favorite snack ever lately, naughty) but I remembered I had two of these no-bake bites in my lunchbox! They saved me from making a bad choice.

Also, they make you forget about second breakfast, which is kind of a bummer. I can never make it from breakfast to lunch without a second breakfast in between but with 2-3 of these bites with my coffee in the morning I forget to even think about food until lunch! Amazing.
